Cointreau Cream & Passionfruit Parfaits​

Elegant layered parfaits featuring a delicate Cointreau-infused whipped cream alternated with vibrant, tangy passionfruit pulp for a sophisticated and speedy dessert.

Ingredients

  • 100 millilitres double cream
  • 2 teaspoons Cointreau, Grand Marnier or Triple Sec
  • 3 passionfruit
  • 1 teaspoon caster sugar (optional)
  • 2 meringue nests (crumbled, for garnish)

Instructions

  1. In a chilled bowl, whip the double cream with the Cointreau, Grand Marnier or Triple Sec and optional caster sugar until it forms soft peaks.
  2. Halve the passionfruit and scoop the pulp into a separate small bowl.
  3. Take four small clear glasses or parfait dishes.
  4. Spoon a layer of the Cointreau cream into the bottom of each glass.
  5. Follow with a layer of passionfruit pulp.
  6. Repeat the layers, ending with a layer of passionfruit on top.
  7. Garnish each parfait with a sprinkle of crumbled meringue nests, if desired.
  8. Serve immediately or chill for a few minutes before serving.
