
A smooth and flavorful dip made from mashed borlotti beans, brightened with lemon and fresh herbs, perfect for spreading on toast or crackers.

Ingredients
- 200g (approx. ½ can), rinsed and drained Borlotti beans
- 1 tablespoon (15ml) Fresh lemon juice
- 1.5 tablespoons Extra virgin olive oil
- 1 teaspoon, chopped Fresh flatleaf parsley
- to taste Maldon sea salt flakes
- to taste Black pepper
- 0.5 tablespoon, very finely minced (optional) Red onion
Instructions
- Place the rinsed and drained borlotti beans in a bowl. Using a fork or potato masher, mash them until mostly smooth but with some texture remaining.
- Stir in the lemon juice, olive oil, and chopped parsley. If using, mix in the finely minced red onion.
- Season generously with Maldon sea salt flakes and black pepper. Taste and adjust seasoning as needed.
- Serve with crackers, vegetable sticks, or as a sandwich spread.
