Gluten-Free Classic Chocolate Chip Cookies

Chewy on the inside and slightly crispy on the outside, these classic gluten-free chocolate chip cookies are irresistibly delicious and perfect for any occasion.

Ingredients

  • 125g unsalted butter (softened)
  • 100g brown sugar
  • 50g white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 180g gluten-free all-purpose flour blend
  • ½ tsp baking soda
  • Pinch salt
  • 100g chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the gluten-free all-purpose flour blend, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in the chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between cookies.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are still soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
