Ingredients
- 50 grams unsalted butter
- 50 grams soft light brown sugar
- 50 grams caster sugar
- 3 x 15ml tablespoons golden syrup
- 4 meringue nests
Instructions
- In a small saucepan, combine the unsalted butter, soft light brown sugar, caster sugar, and golden syrup.
- Heat the mixture over medium-low heat, stirring constantly, until the butter has melted and the sugars have dissolved.
- Bring the mixture to a gentle simmer and continue to cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly and turns a rich golden brown.
- Remove the caramel sauce from the heat and let it cool for a few minutes to thicken further.
- While the sauce cools, gently crush or break the meringue nests into small pieces.
- Serve the warm or slightly cooled caramel sauce in individual dishes, topped with a sprinkle of meringue crunch. Optionally, serve with a scoop of ice cream (not provided).
