Golden Caramel Sauce with Meringue Crunch​

Ingredients

  • 50 grams unsalted butter
  • 50 grams soft light brown sugar
  • 50 grams caster sugar
  • 3 x 15ml tablespoons golden syrup
  • 4 meringue nests

Instructions

  1. In a small saucepan, combine the unsalted butter, soft light brown sugar, caster sugar, and golden syrup.
  2. Heat the mixture over medium-low heat, stirring constantly, until the butter has melted and the sugars have dissolved.
  3. Bring the mixture to a gentle simmer and continue to cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly and turns a rich golden brown.
  4. Remove the caramel sauce from the heat and let it cool for a few minutes to thicken further.
  5. While the sauce cools, gently crush or break the meringue nests into small pieces.
  6. Serve the warm or slightly cooled caramel sauce in individual dishes, topped with a sprinkle of meringue crunch. Optionally, serve with a scoop of ice cream (not provided).
