
Layers of soft flour tortillas, a vibrant and spicy tomato-vegetable sauce, hearty black beans, and sweet corn, topped with a moderate sprinkle of goat's cheddar and baked until golden and bubbling. A lighter, yet satisfying, take on a comforting layered dish.

Ingredients
- 1 tablespoon Olive oil
- 1 (peeled and chopped) Onion
- 1 (deseeded and chopped) Red pepper
- 1-2 (chopped with seeds, adjust to taste) Green bird's eye chillies
- 1 teaspoon Sea salt flakes
- 2 tablespoons (finely chopped) Fresh coriander stalks
- 800 grams (2 cans) Chopped tomatoes
- 1 tablespoon Tomato ketchup
- 800 grams (2 cans, drained and rinsed) Black beans
- 500 grams (2 cans, drained) Sweetcorn kernels
- 150 grams Grated mature goat's cheddar
- 6-7 Soft flour tortilla wraps
Instructions
- Preheat oven to 180°C (350°F). Lightly grease a medium-sized baking dish.
- Heat olive oil in a large pan over medium heat. Add chopped onion and red pepper and sauté for 5-7 minutes until softened.
- Stir in chopped green chillies, sea salt, and chopped coriander stalks. Cook for another minute until fragrant.
- Add the chopped tomatoes and tomato ketchup to the pan. Bring to a simmer, then reduce heat and let it gently cook for 10-15 minutes, allowing the sauce to thicken slightly.
- In a separate bowl, combine the drained and rinsed black beans with the drained sweetcorn kernels.
- Spread a thin layer of the tomato sauce at the bottom of your prepared baking dish.
- Place one tortilla wrap over the sauce. Top with a layer of the bean and corn mixture, then a spoonful of the tomato sauce, and a light sprinkle of grated goat's cheddar.
- Repeat the layering process: tortilla, bean/corn, sauce, cheese, until you run out of ingredients, finishing with a layer of sauce and the remaining cheese on top. Use 6-7 tortillas depending on your dish size.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
- Let stand for a few minutes before serving. Garnish with fresh coriander if desired.
