Pan-Fried Cranberry Sugar Fritters

Ingredients

  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 1/2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 Large egg
  • 3/4 cup Milk
  • 1/2 cup Dried cranberries
  • 1/2 cup (for frying) Sunflower oil or canola oil
  • 2 tablespoons (for dusting) Extra granulated sugar

Instructions

  1. In a medium bowl, whisk together the flour, 2 tablespoons of sugar, baking powder, and salt.
  2. In a separate small bowl, whisk the egg and milk.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Gently fold in the dried cranberries.
  5. Heat sunflower or canola oil in a large skillet over medium heat. The oil should be about 1/2 inch deep. Test the oil by dropping a tiny bit of batter; it should sizzle immediately.
  6. Drop spoonfuls of batter (about 1-2 tablespoons each) into the hot oil. Do not overcrowd the pan.
  7. Fry for 2-3 minutes per side, or until golden brown and cooked through. Adjust heat as needed to prevent burning.
  8. Remove fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  9. While still warm, transfer the fritters to a clean plate and dust generously with extra granulated sugar.
  10. Serve warm.
