
Pan-Fried Cranberry Sugar Fritters
Crispy on the outside, soft on the inside fritters, studded with cranberries and dusted with sugar. A delightful treat ready in minutes.

Ingredients
- 1 cup All-purpose flour
- 2 tablespoons Granulated sugar
- 1 1/2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1 Large egg
- 3/4 cup Milk
- 1/2 cup Dried cranberries
- 1/2 cup (for frying) Sunflower oil or canola oil
- 2 tablespoons (for dusting) Extra granulated sugar
Instructions
- In a medium bowl, whisk together the flour, 2 tablespoons of sugar, baking powder, and salt.
- In a separate small bowl, whisk the egg and milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the dried cranberries.
- Heat sunflower or canola oil in a large skillet over medium heat. The oil should be about 1/2 inch deep. Test the oil by dropping a tiny bit of batter; it should sizzle immediately.
- Drop spoonfuls of batter (about 1-2 tablespoons each) into the hot oil. Do not overcrowd the pan.
- Fry for 2-3 minutes per side, or until golden brown and cooked through. Adjust heat as needed to prevent burning.
- Remove fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- While still warm, transfer the fritters to a clean plate and dust generously with extra granulated sugar.
- Serve warm.
