
An elegant and incredibly quick dessert featuring crisp meringue nests filled with luscious double cream and topped with tangy passionfruit pulp, enhanced with a hint of orange liqueur.

Ingredients
- 200 millilitres double cream
- 4 passionfruit
- 8 meringue nests
- 2 teaspoons Cointreau, Grand Marnier or Triple Sec
- 1 teaspoon caster sugar (optional, for cream)
Instructions
- In a medium bowl, whip the double cream with 1 teaspoon of caster sugar (if using) and the Cointreau, Grand Marnier or Triple Sec until soft peaks form. Be careful not to over-whip.
- Halve the passionfruit and scoop out the pulp into a small bowl.
- Arrange the meringue nests on a serving plate.
- Spoon the whipped cream into each meringue nest, filling them generously.
- Top each cream-filled nest with a spoonful of fresh passionfruit pulp.
