Spicy Glazed Teriyaki Chicken Skewers with Sesame Rice​

Succulent chicken skewers marinated and glazed with a fiery ginger-teriyaki sauce, grilled to perfection. Served alongside aromatic sushi rice lightly seasoned with sesame. An exciting twist on a classic.

Ingredients

  • 750 grams (cut into bite-sized pieces) Chicken thigh fillets
  • 2 x 15ml tablespoons Sake (Japanese rice wine)
  • 4 x 15ml tablespoons Mirin (sweet Japanese rice wine)
  • 4 x 15ml tablespoons Soy sauce or tamari
  • 2 x 15ml tablespoons Soft light brown sugar
  • 2 teaspoons Grated fresh ginger
  • 2 teaspoons (divided) Sesame oil
  • 1-2 tablespoons (or to taste) Sriracha sauce
  • 1 teaspoon (for grilling/broiling) Groundnut oil
  • 450 grams (cooked according to packet instructions) Sushi rice
  • 10-12 (soaked in water for 30 minutes if grilling/broiling) Wooden skewers

Instructions

  1. In a bowl, combine sake, mirin, soy sauce, brown sugar, grated ginger, 1 teaspoon sesame oil, and sriracha sauce. Mix well to create the spicy teriyaki marinade.
  2. Add the bite-sized chicken pieces to the marinade, ensuring they are well coated. Marinate in the refrigerator for at least 1 hour, or preferably 2-3 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers. Reserve any remaining marinade.
  5. Preheat your grill to medium-high heat, or preheat your oven broiler to high. Lightly oil the grill grates or a baking sheet if broiling.
  6. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred. If broiling, place skewers on a baking sheet and broil for 4-6 minutes per side, until cooked and glazed.
  7. While the chicken cooks, pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat and cook for 3-5 minutes until slightly thickened. This will be your glazing sauce. Brush the skewers with this sauce during the last few minutes of cooking for extra flavor and shine.
  8. Once the sushi rice is cooked, fluff it with a fork and gently mix in the remaining 1 teaspoon of sesame oil.
  9. Serve the spicy glazed chicken skewers immediately with the sesame-flavored sushi rice.
