Tropical Coconut Passionfruit Whip​

A light and refreshing tropical dessert made by whipping creamy coconut cream with a touch of sweetness, then layering it with vibrant passionfruit for a zesty finish.

Ingredients

  • 250 millilitres coconut cream (chilled)
  • 2 tablespoons caster sugar
  • 3 passionfruit
  • 1 teaspoon Cointreau, Grand Marnier or Triple Sec (optional)

Instructions

  1. Ensure the coconut cream is well-chilled. Scoop out the thick cream from the top of the can, leaving any watery liquid behind. Place the thick cream in a mixing bowl.
  2. Add the caster sugar and optional Cointreau, Grand Marnier or Triple Sec to the coconut cream.
  3. Whip the coconut cream mixture with an electric mixer until it becomes light and fluffy, resembling whipped cream.
  4. Halve the passionfruit and scoop out the pulp into a small bowl.
  5. Divide the whipped coconut cream among four small serving glasses or bowls.
  6. Top each serving with a generous spoonful of fresh passionfruit pulp.
  7. Serve chilled for a delightful tropical treat.
