Wholesome Honey Yogurt Pancakes​

Start your day right with these light and fluffy wholemeal pancakes, naturally sweetened with honey and made tender with yogurt. A healthy and delicious breakfast option.

Ingredients

  • 1 1/2 cups wholemeal flour
  • 1/2 teaspoon sea salt flakes
  • 1 teaspoon baking soda
  • 1 1/2 cups buttermilk or runny plain yogurt
  • 2 tablespoons runny honey
  • 2 tablespoons, plus more for cooking groundnut oil or other vegetable oil

Instructions

  1. In a large bowl, whisk together the wholemeal flour, sea salt flakes, and baking soda.
  2. In a separate bowl, whisk together the buttermilk (or yogurt), runny honey, and 2 tablespoons of oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. A few lumps are fine.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat. Pour 1/4 cup of batter per pancake onto the hot surface.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately, optionally with extra honey.
