Ingredients
- 200g (approx. ½ can), rinsed and drained Borlotti beans
- 1 tablespoon, finely chopped Red onion
- 1 tablespoon (15ml) Fresh lemon juice
- 1 tablespoon Extra virgin olive oil
- 1 teaspoon, chopped Fresh flatleaf parsley
- to taste Maldon sea salt flakes
- to taste Black pepper
Instructions
- In a medium bowl, combine the rinsed and drained borlotti beans, finely chopped red onion, and chopped parsley.
- In a small separate bowl, whisk together the lemon juice and olive oil.
- Pour the dressing over the bean mixture.
- Season with Maldon sea salt flakes and black pepper to taste. Toss gently to combine all ingredients.
- Serve immediately or chill for flavors to meld.
