Zesty Chicken & Jicama Salad with Creamy Avocado Dressing​

Ingredients

  • 1 Ripe Avocado
  • 125 millilitres Sour Cream
  • 3 tablespoons Fresh Lime Juice
  • 1 (peeled) Garlic Clove
  • 1 teaspoon Maldon Salt
  • Pinch Black Pepper
  • 300 grams Shredded Cooked Chicken or Turkey
  • approx. 500 grams (peeled and cut into 5mm matchsticks) Jicama
  • 2 (finely shredded) Spring Onions
  • 1 handful (finely chopped) Fresh Coriander
  • 125 grams (shredded) Cos Lettuce

Instructions

  1. Prepare the dressing: In a blender or food processor, combine the ripe avocado, sour cream, fresh lime juice, peeled garlic clove, Maldon salt, and a pinch of black pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.
  2. Assemble the salad: In a large bowl, combine the shredded cooked chicken, jicama matchsticks, finely shredded spring onions, and finely chopped fresh coriander.
  3. Add lettuce: Gently fold in the shredded cos lettuce.
  4. Dress and serve: Pour the creamy avocado dressing over the salad ingredients. Toss gently to coat everything evenly. Serve immediately.ju
