Zesty Marinated Whole Borlotti Beans​

Whole borlotti beans marinated in a tangy lemon-herb dressing, allowing the flavors to deepen and infuse for a delicious side or topping.

Ingredients

  • 150g, rinsed and drained Borlotti beans
  • 0.5 tablespoon, very finely chopped Red onion
  • 1 tablespoon (15ml) Fresh lemon juice
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon, chopped Fresh flatleaf parsley
  • to taste Maldon sea salt flakes
  • to taste Black pepper

Instructions

  1. In a small bowl, combine the rinsed and drained borlotti beans with the very finely chopped red onion and chopped parsley.
  2. Whisk together the lemon juice and olive oil in a separate small dish.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Season with Maldon sea salt flakes and black pepper.
  5. Cover and refrigerate for at least 30 minutes, or preferably longer (up to several hours), to allow the flavors to meld and deepen.
  6. Stir before serving.
