Ingredients
- 150g, rinsed and drained Borlotti beans
- 0.5 tablespoon, very finely chopped Red onion
- 1 tablespoon (15ml) Fresh lemon juice
- 1 tablespoon Extra virgin olive oil
- 1 teaspoon, chopped Fresh flatleaf parsley
- to taste Maldon sea salt flakes
- to taste Black pepper
Instructions
- In a small bowl, combine the rinsed and drained borlotti beans with the very finely chopped red onion and chopped parsley.
- Whisk together the lemon juice and olive oil in a separate small dish.
- Pour the dressing over the bean mixture and toss gently to coat.
- Season with Maldon sea salt flakes and black pepper.
- Cover and refrigerate for at least 30 minutes, or preferably longer (up to several hours), to allow the flavors to meld and deepen.
- Stir before serving.
