Cranberry & Egg Skillet

Ingredients

  • 4 large Eggs
  • 1/4 cup Canneberg (Cranberries)
  • 1 tbsp Canola oil
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Instructions

  1. Heat canola oil in a non-stick skillet over medium heat.
  2. In a bowl, whisk eggs with salt and pepper.
  3. Add cranberries to the hot skillet and sauté for 1-2 minutes until slightly softened.
  4. Pour the whisked eggs into the skillet with the cranberries.
  5. Cook, stirring gently, until the eggs are set to your desired consistency (scrambled).
  6. Serve hot.
