Ingredients
- 1 3/4 cups wholemeal flour
- 1/2 teaspoon sea salt flakes
- 1 teaspoon baking soda
- 1 cup buttermilk or runny plain yogurt
- 1/2 cup runny honey
- 1/4 cup groundnut oil or other vegetable oil
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
- In a large bowl, whisk together the wholemeal flour, sea salt flakes, and baking soda.
- In a separate medium bowl, whisk together the buttermilk (or yogurt), runny honey, and groundnut oil until smooth.
- Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. Do not overmix; a few lumps are okay.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the quick bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
