Wholemeal Honey Yogurt Quick Bread​

A deliciously moist and wholesome quick bread, perfect for a healthy breakfast or snack. The tang of yogurt complements the sweetness of honey beautifully, all in a hearty wholemeal base.

Ingredients

  • 1 3/4 cups wholemeal flour
  • 1/2 teaspoon sea salt flakes
  • 1 teaspoon baking soda
  • 1 cup buttermilk or runny plain yogurt
  • 1/2 cup runny honey
  • 1/4 cup groundnut oil or other vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  2. In a large bowl, whisk together the wholemeal flour, sea salt flakes, and baking soda.
  3. In a separate medium bowl, whisk together the buttermilk (or yogurt), runny honey, and groundnut oil until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined. Do not overmix; a few lumps are okay.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the quick bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
