Ingredients
- 1 1/2 cups wholemeal flour
- 1/2 teaspoon sea salt flakes
- 1 teaspoon baking soda
- 1 1/2 cups buttermilk or runny plain yogurt
- 2 tablespoons runny honey
- 2 tablespoons, plus more for cooking groundnut oil or other vegetable oil
Instructions
- In a large bowl, whisk together the wholemeal flour, sea salt flakes, and baking soda.
- In a separate bowl, whisk together the buttermilk (or yogurt), runny honey, and 2 tablespoons of oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined. A few lumps are fine.
- Heat a lightly oiled griddle or non-stick pan over medium heat. Pour 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately, optionally with extra honey.
