Ingredients
- 100 millilitres double cream
- 2 teaspoons Cointreau, Grand Marnier or Triple Sec
- 3 passionfruit
- 1 teaspoon caster sugar (optional)
- 2 meringue nests (crumbled, for garnish)
Instructions
- In a chilled bowl, whip the double cream with the Cointreau, Grand Marnier or Triple Sec and optional caster sugar until it forms soft peaks.
- Halve the passionfruit and scoop the pulp into a separate small bowl.
- Take four small clear glasses or parfait dishes.
- Spoon a layer of the Cointreau cream into the bottom of each glass.
- Follow with a layer of passionfruit pulp.
- Repeat the layers, ending with a layer of passionfruit on top.
- Garnish each parfait with a sprinkle of crumbled meringue nests, if desired.
- Serve immediately or chill for a few minutes before serving.
