Zesty Borlotti Bean & Herb Salad​

A light, refreshing salad featuring creamy borlotti beans, crisp red onion, and a vibrant lemon-parsley dressing.

Ingredients

  • 200g (approx. ½ can), rinsed and drained Borlotti beans
  • 1 tablespoon, finely chopped Red onion
  • 1 tablespoon (15ml) Fresh lemon juice
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon, chopped Fresh flatleaf parsley
  • to taste Maldon sea salt flakes
  • to taste Black pepper

Instructions

  1. In a medium bowl, combine the rinsed and drained borlotti beans, finely chopped red onion, and chopped parsley.
  2. In a small separate bowl, whisk together the lemon juice and olive oil.
  3. Pour the dressing over the bean mixture.
  4. Season with Maldon sea salt flakes and black pepper to taste. Toss gently to combine all ingredients.
  5. Serve immediately or chill for flavors to meld.
