Creamy Lemon-Herb Borlotti Bean Dip​

A smooth and flavorful dip made from mashed borlotti beans, brightened with lemon and fresh herbs, perfect for spreading on toast or crackers.

Ingredients

  • 200g (approx. ½ can), rinsed and drained Borlotti beans
  • 1 tablespoon (15ml) Fresh lemon juice
  • 1.5 tablespoons Extra virgin olive oil
  • 1 teaspoon, chopped Fresh flatleaf parsley
  • to taste Maldon sea salt flakes
  • to taste Black pepper
  • 0.5 tablespoon, very finely minced (optional) Red onion

Instructions

  1. Place the rinsed and drained borlotti beans in a bowl. Using a fork or potato masher, mash them until mostly smooth but with some texture remaining.
  2. Stir in the lemon juice, olive oil, and chopped parsley. If using, mix in the finely minced red onion.
  3. Season generously with Maldon sea salt flakes and black pepper. Taste and adjust seasoning as needed.
  4. Serve with crackers, vegetable sticks, or as a sandwich spread.
