Borlotti Bean & Onion Relish​

A finely diced borlotti bean and red onion relish, bright and zesty, perfect as a vibrant condiment or topping.

Ingredients

  • 150g, rinsed and drained Borlotti beans
  • 1 tablespoon, very finely diced Red onion
  • 0.5 tablespoon (7.5ml) Fresh lemon juice
  • 0.5 tablespoon Extra virgin olive oil
  • 1 teaspoon, chopped Fresh flatleaf parsley
  • to taste Maldon sea salt flakes
  • to taste Black pepper

Instructions

  1. In a bowl, combine the rinsed and drained borlotti beans and very finely diced red onion.
  2. Add the chopped parsley, lemon juice, and olive oil.
  3. Season with Maldon sea salt flakes and black pepper to taste.
  4. Mix all ingredients thoroughly.
  5. Serve as a relish with your favorite dishes or as a vibrant side.
